The Gourmet Restaurant ‘Caroussel’ is considered THE culinary address in Dresden and has enjoyed top ranking amongst the country’s finest restaurants for many years. Since May 2013 Benjamin Biedlingmaier is appointed as the new Head Chef at the Bülow establishment.
‘Bülow´s Bistro’ serves snacks and simple, stylish dishes – modern interpretations of German classics, open daily from 11.30am to 11pm. The bistro is adjacent to the inviting Palais bar, elegant Cigar lounge and charming Winter Garden.
THE culinary address in Dresden with Master Chef Benjamin Biedlingmaier
The only michelin starred hotel restaurant of Dresden and numerous top-valuations opened with the Bülow Palais on the Königstraße. Before the restaurant Caroussel found it's habitat in the historical building of the Bülow Residence on the Rähnitzgasse in the Neustadt of Dresden.
Here, michelin star-chef Benjamin Biedlingmaier and his team in kitchen and service are committed to a high professionalism of the top address for culinary experiences in Dresden.
Since May 2013 Benjamin Biedlingmaier is appointed as the new Head Chef at the Bülow establishment. With their exquisitely light, contemporary cuisine he and his team continue the commitment to be the top dining address in Dresden. The interior enchants with soft hues of apricot and subtle green accents, creating a welcoming and fresh ambiance. Comfortable chairs, Dresden China chandeliers and blonde wood come together with ease and elegance. The ‘Caroussel’ can seat up to 50 diners.

Head Chef Benjamin Biedlingmaier
Benjamin’s career has led him to the Traube Tonbach hotel (Silberberg restaurant), the Schlossgarten Hotel in Stuttgart, the Mandarin Oriental in Munich, Schloss Velden hotel at Wörthersee and the team opening “La Mer” restaurant at the Grand Spa Resort A-rosa on Sylt that already gained a second Michelin star in the third year after its opening. Benjamin’s last position was Deputy Head Chef here.
The 29 years old Benjamin Biedlingmaier confirms the Michelin star for the Caroussel as the youngest star chef in Saxony. He is awarded with 17 points by the Gault & Millau. He won the competition "Newcomer of the Year 2013" by the culinary magazine Der Feinschmecker, which is a vote by the guests.
Restaurant Manager Sarah Leuwer
One era comes to an end; a new era begins. For many years, Antje Kirsch as maître d' was the face and good spirit of the Caroussel Restaurant. The Caroussel has regularly been awarded top marks not only for the cuisine but also for the service. This is the legacy now being taken over by Sarah Leuwer.
For the 28-year-old this is a significant move. She takes on responsibility for one of the top gourmet addresses in Saxony.
Sarah Leuwer trained with us in the Bülow Residenz and for several years thereafter she was at the Kempinski Taschenbergpalais. She returned to the Bülow Hotels as Bistro manager in 2014. With her appointment as Restaurant manager, there has now been a change of generations in the front of the house as well. Benjamin Biedlingmaier, who is one of Germany's youngest starred chefs, has already been at work in the kitchen since 2013.

Bülow´s Bistro in our Hotel Bülow Palais is a convivial venue for informal dining and stimulating conversation, complete with views over the boutiques and galleries of the Königstrasse.
The cuisine of this restaurant with a growing publicity uses organic and regional products, cooks according grandmother's recipts and interprets them modern and contemporary. From Bülow's Bistro you get comfortably to the welcoming Palais Bar, the classy Cigar Lounge as well as the spacious, sunlit Wintergarden. Moderate opening hours simplifies the felxibilty of our guests.
Simple yet delicious dishes, stylishly presented, accompany you through the day: a snack in between, a daily changing lunch menu or relaxed dinner with business partners or friends.
Since april our summer terrace has opened where you may enjoy the daily specials or the menu-recommendation of Benjamin Biedlingmaier for lunch.
Home made cakes and finest coffee specialities are served daily from 2pm to 5.30pm. Our summer terrace invites to enjoy the charme of the baroque quarter with a wonderful view to the promenade Königstraße with the Dreikönigskirche and the Rebecca spring.

Big night out or relaxed end of the day – the Palais Bar makes it possible. The bar is connected to the Bistro, classic cocktails and an impressive selection of German quality wines are on offer. Deeply comfortable club chairs invite for cordial time-out with friends and associates.

A special delight for the Cigar fancier
An assortment of 30 cigar varieties is waiting for you in our Cigar Lounge, along with an exquisite selection of premium spirits, fine cognacs and Whiskies.
The lounge is designed in an English Club style. Take in the opulent detail of the ceiling panel, which is made of real cigar leaves - impressive club tables echo this motif.

The winter garden is the bright heart of the Bülow Palais. Regardless of the seasons, it offers the opportunity to meet friends and enjoy the culinary art of our extraordinary restaurants in atmospheric ambience.
The winter garden is well-situated and offers in- and outsights into the heart of the hotel. The location is suffused with light and composed with shades of warm sandy colours. Together with the big glass lustres, the comfortable arm chairs and the glass roof it has an cheery effect.
The winter garden is very popular for exclusive events and encompasses capacities, that can be individually organised for up to 48 people on round tables, for up to 30 people on an u-shaped board or for up to 28 people on a block board. Moreover, it offers the possibility to organise welcome receptions for up to 80 people as well as an enhancement to the Green Salon.
